We do not call ourselves a restaurant. We are a small room in Milano where, every evening but two, twelve people share a meal that has been refined for one hundred and twenty years.

Donna Lucia Vesuvio plants the family orchard outside Como. Every leaf served at our restaurant still grows there.
Princess Maria José of Belgium dines alone. The Regina Bianca is born that evening.
Vesuvius tremors awaken Naples. Master Pizzaiolo Marco Vesuvio creates Eruzione in tribute. The pizza becomes legend.
First truffle harvest exceeding 80 grams. The Tartufo Bianco Riserva enters the menu — twelve servings per season.
The fourth generation opens the Milano room on Via Montenapoleone. Twelve seats. One fire. Reservation only.
Donna Lucia's original ceramic plates, lost during the war, are recovered from a private collection in Geneva. Restored at the Vatican workshops. Returned to service.
The waitlist is closed. The fire still burns at 487°C. Some things must remain rare.

"Pizza is bread that has waited."
A baker's son who refused to bake bread. He opened a six-table room on Via Toledo in 1906 and served a single pizza — Marinara — for forty-three years. The recipe has not changed.
Como · Lake Country
1908 — 1991
"The garden is the menu. The menu is the garden."
Salvatore's only daughter. She planted the family orchard outside Como in 1923 — every leaf served at our restaurant still grows there. She introduced the vegetarian Giardino in 1930 and refused to add a third course until 1962.
Sorrento · Milan
1942 — 2018
"Fire is honest. It does not lie."
Created Eruzione in 1979 after the Vesuvius tremors. Opened the Milano room in 2008 with twelve seats and one fire. Refused to expand. The waitlist became legendary.
Milan · Tokyo · Naples

"My grandmother's vegetables. My grandfather's fire. My father's silence. My hands."
Trained Naples, then Trento, then Tokyo. Returned to Milano in 2014. Today the only person permitted to light the hearth, knead the dough, or modify the recipe (he has not, and will not). Maestro Pizzaiolo · IV Generation.
The Promise
